Dairy Flat Farm by Lake House is a regenerative growing facility originally established to provide much of the raw ingredients needed for the 2 chef hat kitchen at Lake House, Daylesford. Since opening in 2019 it has expended to include not only the productive farm gardens but also olive grove, orchard, medicinal herb and flower garden, rejuvenated vineyard of chardonnay and pinot grapes, bee hives, ornamental gardens, a sourdough bake house which focuses on slw fermentation and associated viennoiserie and a serviced 6 suite Lodge.

Sault now has an extensive kitchen garden, growing commercial quantities of produce such as garlic, tomatoes, carrots, beans, potatoes, flowers and many more seasonal heirloom vegetables - plus extensive flower fields. Sault works hand in hand with local growers and producers. As a restaurant we offer a 3 or 4 course menu based around the farm and a 7 course Tasting menu as well as a plant based 7 course menu.
